A recipe for the real sour cherry cake from Óbidos with a sour cherry and chocolate filling and chocolate frosting. Worth a try.
Ingredients
-
10 eggs
-
150 g powdered sugar
-
150 g butter
-
100 g peeled and grated almonds
-
140 g culinary chocolate
-
Vanilla essence to taste
Roof
-
150 g culinary chocolate
-
100 g powdered sugar
-
50 g butter
Preparation Method
- Beat the yolks with the sugar, add the softened butter and beat again little by little, adding the almonds and the grated chocolate.
- Whip the egg whites and add a little vanilla
- I put the dough in a high, and large form that I have, greased and sprinkled, with butter and flour respectively and take it to the preheated oven for about 30 to 40 minutes.
- Unmold, and let cool! I cut the cake as best I can in half
- I drizzle the 2 parts with sour cherry liqueur and put sour cherries (without the pit), but these are in only one part of the cake and then I join the two parts.
- After joining, I cover the cake with the chocolate, 150 grs, which I soften in a bain-marie, mix the powdered sugar.
- Once off the heat, add the butter and 3 tablespoons of sour cherry liqueur, mix well, then frost the cake.
