Fried Cod and Cherry Tomatoes with Balsamic Aroma

Portuguese style fried cod with a touch of Balsamic vinegar from Modena.

Ingredients

  • 300 grams of cod
  • oil for frying to taste
For the paste:
  • 100 g potato starch
  • 100 g of flour 00
  • 100 g of rice flour
  • sparkling water to taste
  • 4gr of yeast
For follow-up:

Preparation Method

  1. Clean the fish and remove any bones present.
  2. Cut the cod into slices about 3-4 cm thick.
  3. Prepare the dough with sparkling water, potato starch, 00 flour, rice flour, and yeast.
  4. Heat the oil in a frying pan and when it is hot, fry a few pieces of fish at a time.
  5. Lift them up when they are golden and transfer them to absorbent paper to remove excess oil.
  6. Meanwhile, cut the cherry tomatoes, and season with oil, chives, and salt.
  7. Serve the fried cod on a bed of cherry tomatoes and garnish the dish with a few drops of Modena Balsamic Vinegar.
