Regular consumption of fish during the week is essential to take care of our health. Much appreciated at the Portuguese table, there are countless ways to season sea bream to enhance its sea flavor. In Madeira, the gilthead seabream with passion fruit sauce is typical.
Ingredients

350 g yam

2 Golden fish from the coast of Madeira

2 clove garlic
-
½ lemon (juice)
-
2 tablespoons corn flour
-
5 dessert spoons olive oil

300 g cooked green beans
Preparation Method
- Wash the yam very well and cook it in water seasoned with a teaspoon of salt for about 40 minutes or until tender.
- Make two diagonal cuts on the loins on both sides of the sea bream and season them with a teaspoon of salt, the squeezed garlic cloves, and the lemon juice.
- Let marinate for about 20 minutes.
- Dry the golden ones and sprinkle them on both sides with the flour.
- Heat two tablespoons of oil very well in a large non-stick frying pan and cook the browned ones on both sides.
- Remove the pulp from the passion fruit, add the remaining salt and sugar and mix very well with a wire rod.
- Add the remaining oil without stopping beating to emulsify the sauce well. Season with freshly ground pepper.
- Drain and skin the yams.
- Serve the golden ones, drizzled with the passion fruit sauce and accompany with the yam and green beans.
