Salted Cheesecake with Smoked Salmon
Thinking of those warmer days, today we bring as a suggestion a simple starter, a salted cheesecake.
Ingredients

100 g smoked salmon

150 gr creme fraÎche
-
2 tablespoonful of capers
-
½ lemon, only juice
-
Basil
-
Chives
-
Salt to taste

2 gelatine leaves
-
Lemon thyme
-
100gr of melted butter
Preparation Method
- Melt the butter, place it in a food processor with the biscuits and thyme and chop until you have fine sand. Place the base in some molding tins, press them well, and put them in the fridge.
- Place the gelatine leaves in cold water and leave them to soften.
- In a food processor, prepare the filling: put the salmon, the capers, the cream fraÎche, salt, pepper, lemon juice, and the aromatic herbs. Grind everything until it is very homogeneous. Adjust the seasoning.
- Squeeze the gelatine leaves and dissolve them in a little hot water. Add it to the cream and stir well.
- Assemble the cheesecake, place the cream on top of the chopped biscuit, and put it in the cold to solidify for at least 3 hours.
- Remove the rim, and decorate with some salmon and chives.
- Serve as a starter, or on a cheese board. Enjoy your meal.
