Chicken Stew with Chickpeas and Pumpkin

A simple and delicious recipe, perfect for winter days.

  1. In a pressure cooker, heat the oil and brown the onion and garlic. Add the chicken and let it brown.
  2. Add 1 liter and a half of water, tomatoes, chickpeas, bay leaf, and chicken broth.
  3. Cover the pan and cook for about 40 minutes, after getting pressure, on high heat.
  4. Remove the pressure, open the pan carefully, add the pumpkin and let it cook for about 15 minutes over low heat. Sprinkle the parsley and serve.
