Vegan Quesadilla

A quesadilla is a tortilla, usually a corn tortilla – but sometimes it is made with a wheat tortilla, which is filled with cheese and then grilled.

Ingredients

  • 1 tablespoon olive oil
  • ½ white onion (thinly sliced)
  • 6 portobello mushrooms
  • 1 sachet of Taco Tinga Sauce
  • 1 handful of coriander
  • 600 g grated vegan mozzarella cheese
  • 1 ripe avocado

Preparation Method

  1. Heat the olive oil in a hot pan, then add the onion. Fry gently until translucent. Add the portobello mushrooms and saute for a minute or two over high heat. Just season with a pinch of salt and freshly ground black pepper.
  2. When the mushrooms are soft, introduce the taco tinga sauce and cook for a few minutes (just enough to heat up the sauce). Once done, remove from the heat.
  3. Place one of your Burrito Wraps on the kitchen counter and add a good amount of grated vegan cheese. Top with a few spoonfuls of vegan tinga and finish by adding some vegan cheese.
  4. Fold in half and repeat the same process with the rest of the tortillas and filling.
  5. Heat the quesadillas in a hot non-stick frying pan and when they are nicely browned on one side, turn them over with the help of a spatula to brown the other side as well. Repeat the same with the rest of the quesadillas.
  6. Serve your quesadillas cut in half, with avocado slices and a good amount of Chipotle Salsa.
