Ingredients

50 g sultana

20 ml rum

1 teaspoon vanilla essence

200 g whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

2 units of eggs

50 ml olive oil

30 g walnuts
-
30 g hazelnuts
-
50 g oat flakes
Preparation Method
- Preheat the oven to 180 ºC. Grease and line a baking tray with baking paper.
- In a small bowl, soak the sultanas with the rum and vanilla essence. Leave to macerate for 15 minutes.
- In another bowl, mix together the flour, baking powder, and bicarbonate. Set aside.
- In another bowl, mix the eggs with the sugar, and add the olive oil and apple pulp. Mix well.
- Add the flour mixture to the wet and stir. Add the chopped walnuts and hazelnuts, oat flakes, and the sultanas. Mix well.
- Pour the mixture into the mold.
- Lower the temperature to 160 ºC and bake the cake for about 40 to 50 minutes.
- Remove from the oven and let it rest for 15 minutes before removing it from the mold.
