Cake with apple puree and dried fruit

Concern for health, the planet and food has led more and more people to opt for organic products.

Ingredients

  • cinnamon q.b
  • 50 g sultana
  • 20 ml rum
  • 1 teaspoon vanilla essence
  • 200 g whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 units of eggs
  • 50 ml olive oil
  • 30 g walnuts
  • 30 g hazelnuts
  • 50 g oat flakes

Preparation Method

  1. Preheat the oven to 180 ºC. Grease and line a baking tray with baking paper.
  2. In a small bowl, soak the sultanas with the rum and vanilla essence. Leave to macerate for 15 minutes.
  3. In another bowl, mix together the flour, baking powder, and bicarbonate. Set aside.
  4. In another bowl, mix the eggs with the sugar, and add the olive oil and apple pulp. Mix well.
  5. Add the flour mixture to the wet and stir. Add the chopped walnuts and hazelnuts, oat flakes, and the sultanas. Mix well.
  6. Pour the mixture into the mold.
  7. Lower the temperature to 160 ºC and bake the cake for about 40 to 50 minutes.
  8. Remove from the oven and let it rest for 15 minutes before removing it from the mold.
