A simple and quick dessert to make.
Ingredients
-
300 g puff pastry
-
2 egg yolks
-
1/2 tin condensed milk
-
1 tbsp (dessert) cornflour
-
flour to taste
DECORATION:
-
Strawberries to taste
-
Kiwi fruit to taste
-
pineapple to taste
-
grated coconut to taste
Preparation Method
- Dust a surface with flour and, using a rolling pin, roll out the puff pastry into a rectangular shape with a thickness of 3 mm. With an 8 cm round cutter, cut out 12 circles of pastry.
- With another 6 cm round cutter, cut a circle inside the remaining six circles. Switch the oven on to 200º C. Line a baking tray with a silicone mat.
- Arrange the six single circles on the baking tray. Run a brush dipped in cold water around the edge of the circles on the baking tray.
- Glue the thinner circles to the circles on the baking tray. Brush with egg yolk and bake in the middle of the oven for about 20 minutes. Remove and leave to cool.
- Make the filling: In a saucepan, combine the condensed milk with the cornflour and the remaining yolk, stirring well. Pour in the milk and bring to the boil, stirring constantly. Remove and leave to cool. Fill the puff pastry with the filling.
- Cut strawberries into slices, as well as pineapple, kiwi, and coconut. Decorate the puffs with the fruit and brush the edges with jam. Sprinkle with grated coconut and serve.
