Spaghetti with dried mushrooms

A simple, easy and tasty recipe.

Ingredients

  • 50 g dried mushrooms
  • 3 cups boiling water
  • 1 tablespoon olive oil
  • ¼ cup butter
  • 1 large onion, chopped
  • ½ cup dry white wine
  • 500 ml cream
  • 100 g finely grated Parmesan (and more for sprinkling)

Preparation Method

  1. Soak them in hot water for 30 minutes.
  2. Drain well (reserve the water) and, if there are any sedimented impurities, discard them. Cut the mushrooms into strips. Set aside.
  3. Bring 5 litres of salted water to the boil to cook the spaghetti.
  4. Heat the olive oil with the butter over a low heat and fry the onion until it wilts. Add the mushroom strips and sauté briefly.
  5. Add the wine and wait for the alcohol to evaporate (about 2 minutes). Add the mushroom water and cook for 10 minutes, stirring occasionally, until the stock has reduced by half.
  6. Add the cream and stir until it comes to the boil. Add the Parmesan, adjust the salt and remove from the heat.
  7. Cook the pasta for the time stipulated on the packet. Drain, drizzle with a little olive oil and serve with the sauce and grated cheese to taste.
