Bigoli is a pasta shaped like a long, thick thread with a hole in the centre. This pasta is typical of the Veneto region of Lombardy, Italy. The most popular dishes served with bigoli are duck or game ragù, or more typically “in salsa” with onions and sardines sautéed with breadcrumbs that have been heated in olive oil with bay leaf, rosemary, thyme and salt.
