Blueberry and lemon cake

Blueberries are a delicious fruit and very easy to add to any dessert. Here, combined with lemon in a delicious cake, ideal to serve in a light and delicious snack.

Ingredients

  • 80 g butter (for greasing)
  • 1 dessert spoon of butter
  • 200 g of flour with yeast
  • 1 dessert tea of baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 unit lemon
  • 100 ml of semi-skimmed milk
  • 1 tablespoon of flour

Preparation Method

  1. Preheat the oven to 180 ºC.
  2. Grease a cake tin with a dessert spoon of butter and line it with baking paper. Set aside.
  3. In a bowl, mix the flour, bicarbonate, and salt. Set aside.
  4. In another bowl, mix together 80g melted butter, sugar, eggs and lemon zest, and juice and mix until smooth.
  5. Gradually add the flour mixture, alternating with the milk, and continue beating, until a uniform mixture is obtained.
  6. Place the tablespoon of flour in a small bowl, fold the blueberries into the flour and add them to the dough, stirring.
  7. Arrange the dough in the tin and bake in the oven for about 45 minutes. Leave to rest for at least 30 minutes and unmold onto a wire rack.
