Chicken Stew with Chickpeas and Pumpkin
A simple and delicious recipe, perfect for winter days.
Ingredients

1 tablespoon olive oil

1 large chopped onion

2 crushed garlic cloves
-
500 g diced chicken breast
-
1 bay leaf
-
chicken broth
-
1 cup pumpkin (diced)

2 tablespoons chopped parsley
Preparation Method
- In a pressure cooker, heat the oil and brown the onion and garlic. Add the chicken and let it brown.
- Add 1 liter and a half of water, tomatoes, chickpeas, bay leaf, and chicken broth.
- Cover the pan and cook for about 40 minutes, after getting pressure, on high heat.
- Remove the pressure, open the pan carefully, add the pumpkin and let it cook for about 15 minutes over low heat. Sprinkle the parsley and serve.
