Chicken with Preserved Lemon
A good typical recipe from Africa, full of flavour but easy to make!
Ingredients

1 chicken cut into pieces

1 onion, finely chopped
-
2 finely chopped garlic cloves
-
500 ml chicken stock
-
1/2 teaspoon powdered ginger
-
1 1/2 teaspoon cinnamon powder
-
1 teaspoon turmeric powder
-
4 pickled lemons
-
2 bay leaves
-
Olive oil to taste
-
Salt and pepper to taste
-
chopped parsley
Preparation Method
- Heat some olive oil in a large frying pan and brown the chicken.
- Remove the chicken from the oil and place it on an oven tray.
- Add the onion and chopped garlic to the olive oil and sauté.
- Add the chicken stock, ginger, cinnamon, saffron, olives, and the lemons previously separated from the pulp and cut into thin strips, as well as the bay leaves.
- Season with salt and pepper. Pour this mixture over the chicken and bake in a moderate oven for approximately 1 hour.
- If necessary, add a little water to the chicken.
- Serve sprinkled with chopped parsley.
