Lemon and Yogurt Muffins
These healthy lemon yogurt muffins are super cute and delicious, perfect for breakfast, snacks, and even lunch boxes for the week.
Ingredients

140 g white spelled flour

1/2 teaspoon bicarbonate of soda

1/2 teaspoon baking powder

60 g coconut oil (melted and at room temperature)

80 g natural yogurt
-
2 tablespoon lemon juice
-
1 lemon (zest)
Preparation Method
- Preheat the oven to 180º up and down without ventilation.
- Prepare muffin tins by greasing or placing paper muffin tins.
- Place all the ingredients in a bowl and mix until you get a homogeneous mixture, but don’t mix too much as it can develop the gluten and make the muffins too consistent.
- Then, divide the dough between 6 muffin cups and bake for 16 minutes or until the toothpick test comes out clean.
- Finally, remove from the oven, let it rest for 5 minutes and then remove the muffins onto a rack and let them cool completely.
