Ingredients

600ml cream

2 large lemons, zest and juice
Preparation Method
- Put the cream and sugar in a large saucepan over low heat and bring to a boil slowly. Cook for three minutes, remove from the heat and leave to cool.
- Add the lemon juice, lemon curd, and lemon zest and beat well with an electric mixer until thick and creamy.
- Spoon the lemon cream mixture into six glasses and refrigerate for at least three hours.
- Top with a spoonful of Lemon Curd and serve with Shortbread.
