Lentil and carrot pate

Take advantage of the most wilted carrots and make a different starter for your lunches and dinners. Learn how to make lentil and carrot pâté and surprise everyone who tastes it.

Ingredients

  • 250g carrots
  • 1 clove garlic
  • 2 tablespoonful of extra virgin olive oil
  • 150 g red lentils
  • 250 ml of water
  • 1 teaspoon cumin
  • 30 g of cashew nuts
  • 3 tablespoonful of lemon (juice)

Preparation Method

  1. Wash the carrots very well, cut them into thin slices and put them in a pan. Add the crushed garlic clove and a tablespoon of olive oil. Season with half the salt and add the lentils and water, cover and simmer for about 20 minutes.
  2. Pour everything into the blender, add the remaining olive oil, the cumin, the cashew nuts and the lemon juice. Season with freshly ground pepper and blend well until you obtain a smooth paste (if you think it necessary, add a little more boiling water).
  3. Serve as a starter and accompany with raw vegetable sticks or toast.
