Limpets with Afonso Sauce
Limpets are a very popular shellfish on the islands. In this recipe they are simply grilled, with garlic, pepper, butter and sprinkled with lemon juice.
Ingredients

2 kg live baby limpets with moss

1 large onion
-
2 cloves of garlic
-
1 bunch of parsley

1 dl olive oil
Preparation Method
- Wash the limpets;
- Chop onion and garlic and pass it through olive oil, without letting it brown;
- Add chopped red pepper and parsley and season with salt and pepper;
- Add the limpets and let them cook quickly (don’t let them cook for too long as they may become hard);
- Stir the pan without stirring with a spoon;
- Adjust the seasoning to your taste.
