Linguini with Sun-Dried Tomatoes, Mushrooms, and Basil

A quick, easy and tasty pasta!

Ingredients

  • 400g of linguini
  • 2 garlic cloves
  • 1 bay leaf
  • 1 vegetable broth
  • 1dl of extra virgin olive oil
  • 2 shallots
  • 250g sliced Paris mushrooms
  • grated parmesan cheese q.b. (optional)
  • salt

Preparation Method

  1. Cook the linguini in boiling water with crushed garlic, bay leaf, vegetable stock, and salt.
  2. Make a sauté with a little oil, the shallots cut into slices, and a clove of minced garlic. Add the sun-dried tomato and let it soften a little.
  3. Add the mushrooms and basil, sauté very quickly and adjust seasonings with salt and pepper.
  4. Once the linguini is cooked, drain it and mix it well with the tomato and mushroom sauté. Place on a plate and drizzle with a drizzle of oil. Mix well and serve with grated cheese on the side.
