Quince Cheese Semifreddo
If you’re looking for a dessert to make in the afternoon, try this Quince Cheese semifreddo recipe! In fact, jams with marmalade are always a delight. Enjoy your meal!
Ingredients

400 g Quince Cheese

400 g cream cheese

200 g crackers
-
80 g melted butter
-
50 g sultanas
-
4 dl cream
-
2 dl milk
-
2 tablespoons brandy
-
7 gelatin sheets
Preparation Method
- Crush the cookies in a food processor until they become a powder, add the melted butter and the brandy and mix well until you get a dough. Place in an open mold and with the bottom lined with parchment paper, spread and press with your fingers until you get a compact base. Book in the cold.
- Soak the gelatine sheets in cold water. Bring the cream cheese, half of the cream, the milk and the sugar to a low heat and stir with a stick until well dissolved and homogeneous, without letting it boil. Remove from the heat, add 4 sheets of gelatin, mix very well, then add the sultanas, mix, pour into the mold and refrigerate until solidified.
- Cut 300 g of the Quince Cheese into pieces, put them in a bowl, microwave for a few seconds to soften, remove and stir until creamy. Separately, beat the rest of the cream until thick, add the Quince Cheese and mix. Melt the remaining gelatine sheets in the microwave, without boiling, add to the mixture, stir well, pour into the mold and refrigerate again until solidified.
- Then cut the remaining 100 g of Quince Cheese into pieces, also take them to the microwave to soften and stir well. Unmold the semifreddo, spread with the Quince Cheese cream and serve decorated to taste, for example with blueberries or other red fruit.
