Gratinated onion soup is a traditional French culinary specialty.
Ingredients

6 medium onions, thickly sliced

3 tablespoons of butter
-
¼ cup white wine
-
2 tbsp (tablespoons) of wheat flour
-
1 cup water to dissolve the wheat flour

1 and ½ litre of broth
Preparation Method
- Place the butter in a pan and let it melt. Add the onion with the butter and a little salt.
- Let the onion brown for 30 to 40 minutes over low heat. Stir from time to time until golden brown.
- Put the wine in the pan with the onion. Stir well and let caramelize the onion.
- Put the flour mixed with the water in the pan with the onion.
- Stir well until it boils. Add the cold broth to the pan with the onion.
- Mix it so that no lumps of flour remain. Leave to cook on low heat for 30 minutes or until the soup thickens.
- Transfer to a bowl. Salt and pepper to taste.
- And serve the onion soup with the croutons.
