Accompany these chops with polenta cream, mashed potatoes, or pasta.
Ingredients
-
4 pork chops
-
3 tablespoons of olive oil
-
1 large onion, sliced
-
2 cloves of garlic, chopped
-
1 teaspoon fresh thyme
Preparation Method
- Season the chops with salt, black pepper, and smoked paprika flakes.
- In a large, deep skillet, heat 2 teaspoons of olive oil over medium-high heat. Add the chops and cook on both sides until golden brown, about 10 minutes total. Remove the chops from the pan, place them on a plate, and set aside.
- In the same pan leave the remaining olive oil, add the remaining teaspoon of olive oil, and reduce the heat to medium. Add the onion and garlic and cook, stirring, for about 3-4 minutes. Add the crushed tomatoes, dried thyme, smoked paprika flakes, salt and pepper. Allow to cook over low heat, stirring occasionally, for 20 minutes.
- Place the chops back in the pan and cook them thoroughly. Adjust the salt and pepper, if necessary.
- Serve with some fresh thyme on top, and accompany with polenta cream, mashed potatoes, or pasta.
