Sardines Pataniscas with Rice
Typical Portuguese flavors, served in an original way: sardines with chickpeas, served with tomato rice. A real snack!
Ingredients

50 g cooked grain

1 grated carrot

1 small onion

7 tablespoons of flour

1 coffee spoon of salt

2 eggs
-
½ lemon
-
1 tablespoon of chopped coriander
-
1 tablespoon of olive oil
-
1 teaspoon of salt

250 g needle rice

1 tablespoon of olive oil
-
2 garlic cloves
-
2 ripe tomatoes
-
fresh oregano
-
300 g fresh lettuce mix
-
1 roasted pepper
Preparation Method
Drain the sardines, remove from the can and cut them into pieces, removing the spine.
Place the chickpeas in a bowl, crush it with a fork or crusher, add the carrot, finely chopped onion, flour and salt and mix well.
Add the beaten eggs, lemon zest and coriander and mix well until well combined.
Brush a non-stick frying pan with oil and, when it is hot, add spoonfuls of the dough and let it fry on both sides.
Remove and drain the fritters on absorbent paper.
Bring a pan with water to the boil (twice the volume of the rice) and when it boils, add the salt and the rice, letting it cook for about 10 minutes.
Place the oil in a large frying pan on the heat and sauté the chopped garlic cloves with the tomato, skinned and cut into small cubes, and cook until the tomato is broken.
Add the halved olives, the cooked and well-drained rice and sauté for 2 or 3 minutes.
Remove from heat and sprinkle with fresh oregano.
Serve alongside the pataniscas with the mixture of lettuce and the pepper cut into strips.
