Strawberry Cheesecake Ice Cream

They are perfect for hot summer days.

Preparation Method

  1. Add the cream cheese, cream, milk, strawberry preserve and icing sugar to a food processor and blend until smooth.
  2. Scoop the mixture into the ice cream moulds, leaving about 2 cm of space at the top.
  3. Place the biscuits in a bag and crush with a rolling pin until you have fine flour. Put the mixture into a bowl and add the melted butter. Stir to combine.
  4. Cover the ice cream mould with the crushed biscuits and place in the freezer for at least 6 hours or overnight.
  5. Run the ice cream mould in warm water for about 20 seconds when ready to eat and they should come right out.
