Stuffed Eggplant with Lamb and Spinach

With the arrival of winter, dishes in the oven also arrive. Stuffed eggplant is a delicious option for dinner.

Ingredients

  • 1 eggplant
  • 400g minced lamb
  • 100g frozen spinach
  • 50g of goat cheese
  • 1 onion
  • 1 clove of garlic
  • 1 egg
  • q.b. of Cardamom Grain
  • q.b. of Ground Cumin
  • nutmeg grain q.b.
  • paprika q.b.

Preparation Method

  1. Cut the eggplant in half lengthwise and remove the inside until it is hollow. Sprinkle with salt and let it rest for 10 minutes.
  2. Make a sauté with garlic and onion and add the minced meat.
  3. Add the cardamom, season with cumin, nutmeg and paprika to taste.
  4. Saute spinach also with garlic and onion.
  5. Add the spinach to the minced meat and season to taste. Add the egg and mix well.
  6. Stuff the eggplant with this meat and spinach mixture.
  7. Place in the oven to cook until crispy.
  8. Before turning off the oven, sprinkle with goat cheese.
