Ingredients

1 eggplant

400g minced lamb

100g frozen spinach

50g of goat cheese

1 onion
-
1 clove of garlic
-
1 egg
-
q.b. of Cardamom Grain

q.b. of Ground Cumin
-
nutmeg grain q.b.
-
paprika q.b.
Preparation Method
- Cut the eggplant in half lengthwise and remove the inside until it is hollow. Sprinkle with salt and let it rest for 10 minutes.
- Make a sauté with garlic and onion and add the minced meat.
- Add the cardamom, season with cumin, nutmeg and paprika to taste.
- Saute spinach also with garlic and onion.
- Add the spinach to the minced meat and season to taste. Add the egg and mix well.
- Stuff the eggplant with this meat and spinach mixture.
- Place in the oven to cook until crispy.
- Before turning off the oven, sprinkle with goat cheese.
