10 ml dry sake

4 g salt
Preparation Method
- First of all you need to prepare the vinegar sauce that you will mix into the rice. In a non-stick pan over a low heat, add the vinegar, sake, salt and sugar just until they dissolve.
- Then you need to wash the Japanese rice at least 3 times until the water no longer comes out whitish. Then let it drain for about 15 minutes in a colander or sieve.
- Then place the rice and water in a deep, covered pan and cook over a high heat.
- As soon as steam starts to come out of the pan, lower the heat and cook for another 5 minutes. Then turn off and leave the pot closed for 15 minutes. While your rice is resting, it is important to cook the sauce so that the salt and sugar dissolve well.
- Place the hot rice and the cold vinegar sauce on a plate and mix gently. And it’s ready to be used on your sushi.
