Troffie with Genovese Pesto and Potatoes and Green Beans

It is a traditional Ligurian dish made with trofie pasta, potatoes and green beans mixed with basil pesto. It’s a dish full of flavour, so simple and easy to make and it’s healthy too!

Preparation Method

  1. Add the pasta and potatoes to boiling water. After about 5-6 minutes, add the green beans and cook for another 3-4 minutes until the pasta is al dente and the potatoes are cooked.
  2. Meanwhile, reserve 120ml of the pasta water and add 1-2 tablespoons of the pasta water to the pesto to loosen it and get a thick sauce consistency.
  3. Drain the pasta and vegetables and mix them with the pesto in a large bowl. Add a little more pasta water if necessary and season with salt, and serve.
